Shrimp Spring Rolls

Ingredients
  • 20 Rice wrappers
  • ¼ lb of fresh shrimp, peeled
  • (Optional) cabbage, carrots, mushrooms
  • Salt and pepper, to taste
  • Lemon
  • Soy sauce
  • Vegetable Oil
Instructions
  1. Bring a pan of vegetable oil to boiling point.
  2. As the pan of oil is heating up, spread out the rice wrappers. Lay them flat to enable you to fill them.
  3. If you are only using shrimp to fill the rolls, lay a large shrimp stretched out on the rice wrapper. Sprinkle soy sauce and lemon on the shrimp, and add a dash of salt and pepper. Roll the rice wrapper around the shrimp to make the simple shrimp roll.
  4. If you are adding vegetables for a spring roll style shrimp roll, chop vegetables into long, thin strips. Add the vegetables to the shrimp roll and stretch out a large shrimp. Add a small amount of soy sauce and lemon to the shrimp and vegetables, as well as a pinch of pepper and salt. Roll the rice wrapper to make the shrimp roll.
  5. Place the shrimp rolls inside the boiling oil. Cook until golden brown.
  6. Remove the rolls from the oil and place them on a paper towel to let the excess oil be absorbed.
