Golden Delicious Chinese Coconut Shrimp Recipe

  • 1 ½ pounds medium shrimp peeled and de-veined
  • 1 box tempura batter mix
  • 3 Tablespoons olive oil
  • Fresh coconut
  • ¼ pound very ripe mangoes
  • 1 small onion
  • 1 medium bell pepper
  • 3 Tablespoons white vinegar
  • Salt
  • 3 to 4 Tablespoons sugar
  1. Heat oil in large skillet to very hot.
  2. Rinse shrimp and pat dry.
  3. Dip shrimp into tempura batter and then into coconut.
  4. Fry shrimp in hot oil until golden brown stirring frequently to keep shrimp from sticking.
  5. Remove shrimp to bowl lined with paper towels.
  6. Cover to keep hot.
  7. Mango Sauce:
  8. Remove stone from inside mangoes and discard stones.
  9. Place fruit into blender.
  10. Sauté onion and bell pepper about 10 minutes in about 2 to 3 Tablespoons oil.
  11. Spoon vegetables from oil and add to blender.
  12. Add ½ tsp. Salt and a couple tablespoons sugar.
  13. Puree well and serve with coconut shrimp.
