  • 2 oz butter
  • 2 oz all purpose flour
  • 2 oz golden syrup
  • 1 teaspoon brandy
  • 1 teaspoon ground ginger
  • ¼ pint heavy cream
  • 1 teaspoon lemon juice
  • 2 oz white sugar
  • 4 halved maraschino cherries, to garnish
  1. Preheat the oven to 350 degrees F.
  2. Cook the sugar, syrup and butter in a pan over a medium heat, stirring now and then, until the sugar dissolves.
  3. Add the lemon juice, stir and take the mixture off the heat.
  4. Mix in the ginger, brandy and flour until the batter is smooth.
  5. Grease a pair of baking trays and add teaspoons of the batter to them, 2 inches apart.
  6. Bake the brandy snaps until they are golden brown. Let them cool for a few minutes.
  7. Remove them from the baking trays using a palette knife and wrap them around a spoon handle to make tubes or roll them up to make cones.
  8. Let each brandy snap become firm before removing the spoon handle.
  9. Let them cool down and keep them in an airtight container.
  10. Whip the heavy cream with sugar to taste if desired, and pipe it into the brandy snaps.
  11. Use the maraschino cherries to decorate them.
