  • ¼ cup red wine vinegar
  • ½ cup olives
  • 4 ½ oz canned mushrooms
  • ½ lb mozzarella, cubed
  • 16 slices hard salami, halved
  • ⅓ cup olive oil
  • 1 teaspoon Italian seasoning
  • 1 sliced garlic clove
  • 1 teaspoon grated lemon peel
  • ½ teaspoon crushed red pepper flakes
  • 16 bamboo skewers
  1. Whisk together the vinegar and olive oil, and then add the garlic and lemon peel.
  2. Sprinkle in the red pepper flakes and Italian seasoning and whisk again.
  3. Add the mushrooms and cheese.
  4. Cover the bowls and shake or turn over to ensure the mushrooms and cheese is well covered with the oil.
  5. Chill for between 1 and 24 hours, turning now and then.
  6. Slide an olive on to each skewer, then a slice of salami, then a cheese cube, then some more salami and finally a mushroom.
  7. Keep going until you have used all the ingredients and then serve.
