Ingredients
  • 6 boneless, skinless chicken breasts
  • 6 oz thawed apple juice concentrate
  • 2 tablespoons butter
  • 2 minced garlic cloves
  • 1 chopped onion
  • 2 teaspoons curry powder
  • 3 cored, sliced Granny Smith apples
  • ⅛ teaspoon ground nutmeg
  • 1 tablespoon cornstarch
  • ⅓ cup chicken broth
  • 1 bag mixed salad leaves, to serve
  • Saffron strands, to garnish (optional)
  • Salt and black pepper
Instructions
  1. Combine the nutmeg, apple juice concentrate, and curry powder in a bowl.
  2. Combine the onions, garlic, and butter in a glass or plastic dish and microwave them for a couple of minutes on high or until the onion is soft.
  3. Transfer the mixture into a 3 or 4 quart crockpot.
  4. Dip each chicken breast into the apple juice mixture and then arrange them in the crockpot over the onion and garlic mixture.
  5. Pour the rest of the juice in as well.
  6. Season with salt and pepper, then cover and cook for 5 hours on low or until the chicken is nearly done.
  7. Add the apples and cook for another 45 minutes or until the chicken is done and the apples are soft.
  8. Combine the cornstarch and broth and stir this mixture into the crockpot.
  9. Cover and cook on high for 15 minutes or until the sauce is thick.
  10. Remove the chicken breasts and slice them, then stir them back into the apple mixture.
  11. Serve with salad leaves and garnish the salad with saffron strands if you like.
