  • 1 lb fresh mushrooms
  • 7 oz crabmeat
  • ¼ cup plus 3 tablespoons grated Parmesan cheese
  • ⅓ cup mayonnaise
  • ¼ teaspoon paprika
  • 5 thinly sliced green onions
  • ¼ teaspoon dried thyme
  • ¼ teaspoon dried oregano
  • Black pepper, to taste
  1. Preheat the oven to 350 degrees F.
  2. Combine the crabmeat, green onions, herbs, and pepper.
  3. Blend in the mayonnaise and ¼ cup of the Parmesan cheese.
  4. Refrigerate this filling until ready for use.
  5. Wipe the mushrooms clean with a damp towel and remove the stems.
  6. Spoon out the gills and the base of the stem, making deep cups, and discard the stems.
  7. Fill the mushroom caps with rounded teaspoonfuls of the crab filling.
  8. Arrange them in an ungreased baking dish and sprinkle the tops with Parmesan and paprika.
  9. Bake for 15 minutes then serve immediately.
