  • 9 slices mozzarella
  • 7 oz thawed chopped spinach
  • 1 egg
  • 1 onion
  • ½ pint heavy cream
  • 4 ½ oz mushrooms
  • 2 tablespoons vegetable oil
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper
  1. Preheat the oven to 425 degrees F.
  2. Heat the oil in a skillet over a moderate heat.
  3. Finely chop the onion and mushrooms. Sauté them in the oil.
  4. Add the salt and black pepper.
  5. Add the spinach to the skillet and let it cook.
  6. Roll out the puff pastry and cut it into 9 squares.
  7. Stir the cream and egg into the spinach mixture and divide it between the puff pastry squares.
  8. Lay a mozzarella slice on top of each one. Bake for 25 minutes.
  9. Let the puff pastry squares cool for 5 minutes on a wire rack, then serve warm.
