Ingredients
  • 1 lb masa (tortilla dough)
  • 1 lb queso fresco (crumbly Mexican cheese)
  • 1 can refried beans
  • ⅔ lb bacon
  • 1 lb crema rancherito
  • 2 jalapenos
  • 1 ½ lbs fresh green tomatillos
  • 2 cloves garlic
  • 1 cup water
  • 1 teaspoon salt
  • ¾ cup fresh cilantro ½ onion
Instructions
  1. Take the outer husks off the tomatillos.
  2. Roast the jalapenos, tomatillos, and onion on a Mexican comal, which is a big cast iron pan.
  3. If you do not have, one you can roast them in a 350 degrees F oven.
  4. Put the garlic, water, salt, and cilantro in a blender with the cooked tomatillos, onion, and jalapenos and blend well.
  5. You might need to add some more water and adjust the salt.
  6. This mixture is the salsa verde. Fry the bacon and crumble it, keeping the grease in the pan.
  7. Divide the masa into 12 portions and shape each one into a 5 inch wide round.
  8. Cook them on the comal for a few minutes until they become dry.
  9. Turn them over and cook the other side.
  10. Again, use a warm oven if you do not have a comal.
  11. Pinch the edges of the picaditas while you cook the second side, to form a lip.
  12. Spoon a teaspoon of bacon grease over the top of each one and add some of the bacon and queso fresco.
  13. Top with the salsa verde and queso fresco.
  14. Warm up the refried beans and sprinkle some queso fresco over the top.
  15. Serve hot.
