  • 1 cup ricotta cheese
  • ½ cup gruyere cheese, grated
  • ½ cup goat cheese, chopped
  • ¼ cup sour cream
  • 1 lb puff pastry dough
  • 2 eggs
  • Salt and black pepper
  1. Roll out the puff pastry dough on to a floured board, and then cut out 5 inch rounds or 4 inch squares.
  2. Sprinkle a baking sheet with water and put the rounds on it.
  3. Prick them with a fork and chill them in the refrigerator for half an hour.
  4. Beat the ricotta and sour cream with 1 egg, and then add the goat cheese, half the gruyere and a little salt and pepper.
  5. Beat the other egg and brush it over the edges of the puff pastry shapes.
  6. Put some of the ricotta mixture inside each one and pull the edges up, pinching the pastries into triangle shapes, to enclose the filling completely.
  7. Cover a baking sheet with parchment paper and put the cheese triangles on it.
  8. Chill them for another half an hour.
  9. Preheat the oven to 425 degrees F.
  10. Brush the rest of the beaten egg over the cheese-filled triangles and bake them for 15 minutes or until golden brown.
  11. Sprinkle the rest of the gruyere over them and bake for another 5 minutes or until the cheese melts. Serve hot.
