  • 24 spears asparagus, trimmed
  • 6 sheets phyllo
  • 12 thin slices prosciutto, halved crosswise
  • 1 cup grated parmesan
  • 3 tablespoons melted butter
  1. Preheat the oven to 450 degrees F and line a baking sheet with some parchment paper.
  2. Steam the asparagus for a minute or until bright green then cool in a colander.
  3. Put a sheet of phyllo on a work surface and brush it lightly with butter.
  4. Cut into 4 rectangles. Cut the asparagus into 4 inch lengths.
  5. Put a piece of prosciutto on to each pastry rectangle, lining it up along the short edge.
  6. Arrange an asparagus spear over the prosciutto so the last inch lies outside the phyllo edge.
  7. Sprinkle with parmesan, then roll up and secure the phyllo, using butter to seal it.
  8. Arrange the phyllo wrapped asparagus on a baking sheet and bake for 5 minutes or until the pastry is golden brown.
  9. Serve with a grated cheese topped dish of sour cream for dipping.
