Chilled Appetizers with Sliced Turkey and Omelet

  • 4 slices bread, toasted on one side
  • 8 slices smoked turkey
  • 4 eggs
  • 2 tablespoons warm water
  • 2 teaspoons butter
  • 8 sprigs cilantro
  • 2 teaspoons sun-dried tomatoes, chopped
  • 4 radishes, halved
  • 4 tablespoons mayonnaise mixed with 1 teaspoon horseradish puree
  • Salt and black pepper
  1. Mix the water, eggs, sun-dried tomatoes, salt and pepper in a bowl, beating the mixture using a fork until everything is combined.
  2. Melt the butter in a skillet, and then add half the egg mixture.
  3. Let the eggs set, then push the edges inwards with a spatula, so the raw egg on top flows under the omelet.
  4. Keep doing this until the whole omelet is still shiny but set.
  5. Transfer the omelet on to a plate.
  6. Repeat the process with the remaining egg mixture to make a second omelet.
  7. Arrange 2 bread slices toasted side down on a plate and top them with an omelet.
  8. Repeat with the other omelet.
  9. Put the smoked turkey on top, followed by more bread, more omelet and finally the remaining turkey.
  10. Cut the layered stacks into diamond shapes, as per the photo below.
  11. Garnish each one with some of the horseradish mayonnaise, a piece of radish and a sprig of cilantro.
