Ingredients
  • 7 fl oz water
  • 2 eggs
  • 1 ½ oz unsalted butter
  • 1 teaspoon cayenne pepper
  • 1 tablespoon chopped fresh dill
  • 18 fl oz vegetable oil
  • 1 ½ oz chopped ham
  • 2 ¾ oz grated cheddar cheese
  • 3 ½ oz plain flour
  • Salt and black pepper
Instructions
  1. Bring the water to a boil, and then add the butter.
  2. When it melts, add the flour.
  3. Whisk with a wooden spoon until the mixture is smooth and comes away from the pan sides.
  4. Let it cool for about 5 minutes, and then add the dill, cheese, eggs, cayenne pepper and ham.
  5. Stir well.
  6. Heat the oil in a heavy skillet until it is very hot, and then fry teaspoons of the beignet mixture in the hot oil.
  7. Each beignet will need about 5 minutes.
  8. They will turn golden brown and puff up when they are done.
  9. Use a slotted spoon to remove the beignets from the oil.
  10. Drain them on paper towels, season with salt and black pepper and serve them hot.
