Ingredients
  • 1 zucchini, trimmed
  • 1 package smoked salmon
  • 2 tablespoons cup sour cream
  • 4 oz gorgonzola, crumbled
  • ¼ cup canola oil, for frying
  • 2 teaspoons chopped fresh parsley
  • Lemon juice, to serve
  • ¼ teaspoon black pepper
  • 24 chives, to garnish
Instructions
  1. Slice the zucchini into 8 lengthwise strips using a mandolin or sharp knife.
  2. The strips should be flexible but not wafer thin.
  3. Heat the oil in a 12 inch frying pan and fry 4 strips of zucchini at a time.
  4. Cook them for 1 ½ or 2 minutes per side, until they are soft and bendy but not brown.
  5. Drain the zucchini on paper towels.
  6. Combine the sour cream, pepper, gorgonzola, and parsley and divide this mixture between each zucchini strip.
  7. Top with a piece of smoked salmon and 3 chives, and then roll the zucchini strips up, securing them with toothpicks.
  8. Squeeze a little lemon juice over the zucchini rollups just before serving.
  9. Alternatively, serve a wedge of lemon on each person's plate.
