  • 4 boneless, skinless chicken breasts
  • Handful baby spinach leaves
  • 1 cup feta cheese
  • 8 slices bacon
  • 1 tablespoon olive oil
  • ½ red bell pepper, diced
  1. Preheat the oven to 425 degrees F.
  2. Cut into the thick end of the chicken and cut ⅔ of the way into the breast.
  3. Use your fingers to make a hole. Combine the spinach, red bell pepper, oil and feta, then stuff the chicken with this mixture.
  4. Spiral wrap the chicken breasts with the bacon slices so that all the meat is covered.
  5. Put the chicken on a non stick baking tray and roast for 20 to 22 minutes until the chicken is cooked through and the bacon is crisp.
  6. Let the bacon wrapped chicken breasts cool for 10 minutes then cut each one into 4 pieces to make appetizer size portions.
