  • 6 tomatoes
  • 1 ½ cups sour cream
  • 2 tablespoons walnuts
  • 2 tablespoons plus 1 teaspoon lemon juice
  • ½ cup grated parmesan
  • 1 minced clove garlic
  • 1 cup plus 1 tablespoon fresh basil leaves
  • ⅛ teaspoon black pepper
  • Salt, to taste
  • Arugula, for garnish
  1. Finely chop the tomatoes and 1 tablespoon of the basil leaves.
  2. Stir them together and divide this tomato mixture between 8 serving glasses.
  3. Combine the sour cream with 1 teaspoon of the lemon juice and the black pepper.
  4. Divide this mixture between the serving glasses, spooning it on top of the tomatoes.
  5. Put the remaining basil leaves in a food processor and chop them coarsely.
  6. Add the rest of the lemon juice, the walnuts, parmesan, and garlic and blend until the mixture is like a thick paste.
  7. Taste the pesto and add water if it is too thick or salt if it needs some.
  8. Divide the pesto between the serving glasses, on top of the sour cream mixture, and then garnish each one with some arugula and serve.
