  • ½ lb Italian sausage
  • ½ lb ground beef
  • ¼ cup butter
  • ⅓ cup soft breadcrumbs
  • ⅔ cup dry breadcrumbs
  • 2 cups shredded cheddar
  • 1 teaspoon dried basil
  • ½ cup chopped red bell pepper
  • 2 teaspoons minced garlic
  • ½ cup water
  • 2 tablespoons fresh parsley, chopped
  • 2 lbs fresh mushrooms
  • Grated parmesan, to serve
  1. Preheat the oven to 400 degrees F.
  2. Remove the stems from the mushrooms.
  3. Chop them and keep them on one side.
  4. Put the meat in a skillet and cook it over a medium high heat until it is browned.
  5. Drain, crumble and set it aside.
  6. Melt the butter in a pan over a medium heat, and then add the bell pepper, basil, mushroom stems and garlic.
  7. Combine the ground beef, sausage, breadcrumbs, cheese, parsley, water and mushroom mixture in a bowl.
  8. Put the mushroom caps on a baking tray, top down.
  9. Stuff each one with the beef mixture, piling it high.
  10. Bake for about 18 minutes or until the filling is hot and browned.
  11. Sprinkle parmesan over the stuffed mushrooms and serve them hot.
