Ingredients
  • ½ cup mayonnaise
  • 1 cup grated Parmesan cheese, plus more for topping
  • 1 spaghetti squash, halved and seeded
  • ¼ cup butter
  • 2 cups grated Monterrey Jack cheese
Instructions
  1. Preheat the oven to 350 degrees F and spray a baking dish with nonstick spray.
  2. Put the spaghetti squash cut side down on a lightly greased baking sheet and bake until soft when a fork is inserted - this will take about 35 minutes.
  3. Scoop out the cooked squash, and put it in a mixing bowl.
  4. Add the butter to the squash and stir until the butter melts.
  5. Stir the mayonnaise, 1 cup of Parmesan cheese, and the Monterey Jack cheese into the squash mixture until well blended.
  6. Pour into the prepared baking dish and sprinkle with 3 tablespoons of Parmesan cheese.
  7. Bake for 20 minutes.
