Recipe for Grilled Peaches Appetizer with Prosciutto

Ingredients
  • 2 ripe peaches
  • 8 thin slices prosciutto
  • 4 oz goat cheese
  • Fresh rosemary, for garnish
Instructions
  1. Wash and dry the peaches. You can peel them if you want, but that is optional.
  2. Cut the peaches in half and discard the pits.
  3. Cut them half again and then a third time, trying to get all the pieces a similar size.
  4. Each peach will now be in 8 pieces, so you have 16 peach wedges in total.
  5. Oil the grill grate and heat it until it is quite hot.
  6. Grill the peach wedges for a few minutes per side or until you can see nice grill marks on both sides.
  7. Let them cool a little.
  8. Cut the goat cheese into 8 pieces.
  9. Wrap each peach wedge in prosciutto, tucking in a piece of goat cheese.
  10. Serve garnished with fresh rosemary.
