Mini Hot Dogs in Homemade Cheddar Buns

  • 12 oz cocktail frankfurters
  • ½ teaspoon salt
  • 5 eggs
  • 1 ¼ cups water
  • 2 teaspoons melted butter
  • ¼ lb coarsely grated cheddar cheese
  • 1 ½ cups all purpose flour
  • 2 teaspoons poppy seeds
  • 1 ½ sticks unsalted butter
  • ½ red bell pepper, in thin strips
  • 1 leek, finely sliced
  • Mustard, to serve
  1. Preheat the oven to 375 degrees F and put oven racks in the upper and lower thirds of the oven.
  2. Bring the butter, salt and water to a boil in a big pot over a medium heat, and then turn the heat to low and tip in all the flour.
  3. Cook the mixture, stirring with a wooden spoon, for 2 minutes or until the mixture is very thick and sticky.
  4. Transfer the mixture to a bowl and leave to it cool for 5 minutes.
  5. Add the eggs and beat them with an electric mixer or wooden spoon.
  6. Beat in the cheese. Grease a pair of baking sheets with the melted butter.
  7. Snip a corner off a bag to make a 1 inch opening and spoon the cheese mixture into it.
  8. Twist the bag above the cheese mixture, then pipe 20 lengths on to the baking sheet, about 2 inches apart.
  9. Sprinkle the poppy seeds over them.
  10. Bake the rolls, switching the baking tray at the top with the baking tray at the bottom of the oven halfway through the cooking time.
  11. The rolls should take about half an hour until they are pale golden and puffed up.
  12. Turn the oven off. Make slits through the side of each dinner roll, and then let them dry in the warm oven for 10 minutes.
  13. Heat a skillet until it is smoking, then turn the heat down to medium and cook the red bell pepper strips and leeks until soft.
  14. Spread some mustard in each dinner roll, and then add the leeks and bell pepper strips.
  15. Add the frankfurters to the skillet and cook them for 5 minutes, then add one to each dinner roll.
  16. Serve hot.
